Easy No-Bake Lemon Cake – Light, Creamy & Sugar-Free

Serves 8–10
Prep time: 15 min + 2 hours chill time
Vegetarian – No eggs – With dairy – No oven needed

Ingredients:

  • 1 can (360 ml) evaporated milk (preferably very cold)

  • 1 can or pouch (390 g) sugar-free condensed milk (AluSweet)

  • ½ cup (120 ml) lemon juice

  • 2 packs of Maria or Mana cookies (sugar-free versions available)

Preparation:

  1. In a large bowl, combine the cold evaporated milk, AluSweet condensed milk, and lemon juice. Beat at high speed for 7–10 minutes, until the mixture thickens slightly (not a cream, but more consistency). You can also use a blender for 5 minutes—trust the process, it works!

  2. In a dish or baking pan, layer the lemon mixture with Maria cookies. Continue layering until you reach the top of your dish. Make sure the cookies are well covered.

  3. Chill in the refrigerator for at least 3 hours. If you’re in a rush, refrigerate for 1 hour and then place in the freezer for a few extra minutes to speed it up.

  4. Before serving, decorate with crushed cookies and lemon zest. Enjoy this cool and creamy dessert with zero baking and full flavor!
